Foundations Programs
We are pleased to introduce our new 30-hour programs in culinary, baking and pastry, and world cuisine. You may attend any one or all of these programs. Whether you are a professional in another field, a culinary professional or considering becoming one, or are looking for a challenging and rewarding experience, then these programs are for you. Programs meet on Tuesday and Thursday evenings beginning in September. In addition we offer a management program. The 4 programs cover a total of 114 hours of class time. Please read at the bottom of this page for additional terms and conditions.*
You may in enroll in any one or all of our programs. If you register (which includes paying in full) for all 4 programs by July 31, you will receive a $100 gift certificate good for any of our other culinary classes as Chez Bay Gourmet. Certain conditions apply.
Culinary Foundations Program
Tuesdays and Thursday Evenings: 6:15PM to 9:30PM
Begins Thursday, September 4 and concludes Tuesday, September 30
8 sessions (30 Hours)
Tuition: $625.00 Per Student

If you answered yes to any of these questions then this program is for you!!! This program is open to adults (16 years of age and older) who have any level of experience.
This 8-part program will introduce you to cooking, the culinary world and how to cook like a professional whether you are considering a culinary career or just want to be a better home cook for family and friends. We go beyond recipes by understanding the rhythm of a recipe; substitutions and best practices. In addition to the delicious food we prepare in each class, you will also gain an understanding of the following:
- food and kitchen safety
- comprehensive knife skills
- mise-en-place (prep work - you'll learn how to do it safely and efficiently)
- equipment and produce identification
- cooking techniques including moist and dry heat methods
- organizing and editing a set of recipe instructions for perfect results
- nutrition
- substitutions and equivalents
- baking basics
Participants are required to wear a chef's coat or apron; wear non-skid closed-toe footwear and bring an 8" chef's knife and paring knife to class each session. All other supplies including food are supplied by the school. Successful participants will receive a certificate of completion which is based on attendance, participation and cooperation, attitude, and grades on projects and tests.
No prerequisites. HS diploma or higher (or if under 18 years of age, evidence of a "B" average and recommendation by a HS principal or guidance counselor required).
Baking and Pastry Foundations Program
Tuesdays and Thursday Evenings: 6:15PM to 9:30PM
Begins Thursday, October 2 and concludes Tuesday, October 28
8 sessions (30 Hours)

If you answered yes to any of these questions then this program is for you!!! This program is open to adults (16 years of age and older) who have any level of experience.
This 8-part program will introduce you to baking and pastry, opportunities in the field and how to bake like a pro using conventional equipment. We cover a variety of techniques and methodologies so you can be assured your results are consistent every time from apple pie to zucchi bread.

- mise-en-place and proper measuring of ingredients (weight vs. volume)

- comprehensive baking techniques
- organizing and editing a set of recipe instructions for perfect results

Participants are required to wear a chef's coat or apron; wear non-skid closed-toe footwear and bring an 8" chef's knife, rolling pan and knife to class each session. All other recipes, handouts and supplies including food are supplied by the school. Successful participants will receive a certificate of completion which is based on attendance, participation and cooperation, attitude, and grades on projects and tests.
No prerequisites. HS diploma or higher (or if under 18 years of age, evidence of a "B" average and recommendation by a HS principal or guidance counselor required).
Advanced Culinary: An Exploration of World Cuisine
Tuesdays and Thursday Evenings: 6:15PM to 9:30PM
Begins Thursday, October 30 and concludes Tuesday, November 25
8 sessions (30 Hours)
Tuition: $625.00 Per Student
This program explores international cuisine including American Regional specialties. Each session we will prepare signature recipes of a given region with an emphasis on the ingredients and techniques common to that region. We will cover cooking from Latin America; Europe, Asia, Mediterranean and Middle East; Africa and Caribbean. Our final session will feature a banquet of dishes from around the globe.
No prequisite; however, Culinary Foundations is highly recommended. We also strongly encourage you to enroll in the Knife Skills Seminar offered in September. HS diploma or higher (or if under 18 years of age, evidence of a "B" average and recommendation by a HS principal or guidance counselor required).
Chef Training: Introduction to Culinary Management
Tuesdays and Thursday Evenings: 6:00PM to 10:00PM
Begins Tuesday, December 2 and concludes Thursday, December 18
6 sessions (24 hours)
Tuition: $550.00 Per Student
If you are aspiring to complete the 4 programs or are already a culinary professional, then you need to take this program as well. We will cover the business side of working in the culinary field including food costing and budgeting, bookkeeping, marketing and promotion, resource management; recipe testing and menu design and career opportunities. This program is ideal for anyone in the field who is looking to take the next step in their career.
Additional Terms and Conditions
-We welcome anyone into this program - age 16 and older.
-Participants must have graduated high school or are currently attending with a B average or higher plus a strong recommendation from their principal or guidance counselor.
-Tuition is non-refundable after the August 20, 2008. Refunds are subject to a 20% administration fee.
- We accept Visa, MC and Discover for payment of tuition. Beginning August 1, we will only accept a 10% deposit by credit card and the balance by check or money order with 7 days of receiving the deposit.
-Participants are expected to compete all course work including projects that require time and effort in addition to the standard program hours. Most projects/homework will require about 20-30 minutes outside of class. In the Culinary Management Program a more extensive project requiring about 5-10 hours is part of the curriculum.
-If you are unable to attend a program you may send someone in your place provided you have not already begun the program. We cannot accept late entrants into the program.
-You may only miss one session per program in order to receive your certificate.
-Most successful participants who complete our program will have valuable marketable skills for obtaining entry-level employment or promotability to a higher level position with a current employer or have the culinary technical understanding for self-employment in certain professions such as personal chef or caterer. However, we make no claims or guarantees that you will find employment or receive a promotion - success is solely your responsibility. From time to time, we will make career opportunities known to our classes during the term of the program.
-These programs also make an excellent gateway for those seeking a formal culinary education in the future. Due to our size, we are uniquely positioned to offered a more personalized experience in just over 100 hours!
-Participants who receive a promotional $100 gift certificate may use it toward any of our other classes, series and workshops. We do not accept them for tuition payment for these programs. You are welcome to re-gift the certificate to another person.
